Traditional Panchakajjaya Recipe for Navratri:
Panchakajjaya is a traditional Konkani sweet dish prepared specially during Navratri celebrations using aromatic cardamom powder and pure ghee. The authentic recipe requires simple ingredients like sesame seeds, roasted gram, grated coconut, and jaggery. First, the sesame seeds and roasted gram are gently dry-roasted before grinding the gram into a coarse powder. Next, the grated coconut is sautéed in a pan using melted ghee over low heat until properly roasted. All these prepared ingredients are then combined thoroughly in a bowl along with powdered jaggery. Finally, aromatic cardamom powder and additional ghee are added, and the mixture is well-mashed by hand to blend the flavors. This delightful traditional offering is credited to Vijayalakshmi Ammal from Kollam, with preparation guidance by Chef Ashok Eapen.
